Everything but the kitchen sink

It has been forever since I have updated and there is much to update about!! So lets get going!

The rest of summer

First off, my mom and I went on a road trip to look at schools for grad school. I want to do a school counselor program. It was fun to take a road trip and spend time with my mom. I went to Sac State, San Jose State and St. Mary’s. Of the three I liked St. Mary’s, but for $25,000+ a year it should be the program that was most appealing! Honestly Sac State was the least impressive, and I would want to try my hardest to not go there. The campus and feel of the school just didn’t stand out to me. Did that happen to any of you while looking at colleges?? Did you like the school that cost the most? I’m still not sure whether I want to do grad school right away. Right now I am leaning more towards taking a year off, but we will see how everything ends up. Honestly I need to pray about it a LOT more because I really don’t know what the Lord has in store for me next year. It is slightly crazy to me that I am already thinking about plans for next year when I have literally just started fall team.

Other then looking at schools my mom and I visited SLO Saturday night until Wednesday morning. It was really great to hang out and get to spend time there and see so many wonderful people! My mom and I stayed at Apple Farm which was so much fun! We got to do a lot of things that I love in SLO including going to Avila! It was super windy, but still great just to be at the ocean! I picked up some rocks and stuff for another little project in my living room : ) It was great getting to spend some quality time with Gavin before being apart for almost 2 months, which will be our longest time apart so far. Also I loved getting to go to Crusade and seeing everyone there! I also got to go to Jesus burgers for a little and the slack street party. All of it was so great to go to! Being away makes me realize how unique and special the community is there. Seriously that many college students who are seeking, on fire for and loving Jesus is amazing! It makes me want that kind of community here in Eugene. I feel so blessed to have been able to spent 2 years in that amazing transformational community. SLO, Crusade and the people there have made a lasting impact on my life and it was really great to be able to experience that one more time before coming up here for the year. Also I loved getting to catch up on life with people and I truly wish I had the time to get to talk more in depth with more people to hear about their summers and how God was working in their lives this summer. But, that is why there is skype right?  ; ) It was so great to see so many people that I care about, it made me miss you all less!! I had been hearing about people’s lives from Gavin, but it was great to actually talk to people and hear from them, not that I don’t appreciate the updates Gavin : )

So then I came back and I was home for a day then I came down to Eugene to get settled in before school started. Friday night I was bored so I baked cupcakes for the UO game Saturday. I had seen the cook books Hello Cupcake and Whats New Cupcake at the Jelly Belly factory (where my mom and I got belly flops SO GREAT!) and was inspired. So I was ambitious and decided to make Oregon O decorations for my cupcakes. My yellow Os set up nicely, but I didn’t make them as thick as I should have, so some broke. However my green Os did not set up very well. I think it was because I was working on the counter that is above my dishwasher so the heat from that made the chocolate set up funny. I got the colored melting chocolate from Michael’s and it tasted just like white chocolate and wasn’t too pricey!  Here is the finished product:The basic idea with the melted chocolate is to have a design or pattern under a piece of parchment paper and then pipe the chocolate in the design and let it set. To make it easier to put the decorations on the cupcakes I made a point to stick into the cupcake. I don’t have a picture, but you get the idea. Overall pretty easy to make plain cupcakes a little more fun! Not to mention the Ducks won Saturday against Arizona State!! WOOOOO!!! Saturday we play Stanford it is going to be a close game, but hopefully a good one with a Oregon W! I am hoping to get a ticket to be able to experience a Pac-10 game as a student, but we will see. It is really hard to get tickets because they only have around 4,000 student tickets. Anyway, Sunday I went back to Salem for Ashley and Matt’s engagement party. It was a great BBQ and nice to see family friends. Then I came back to Eugene to get ready for school Monday!

School

School started Monday and it felt really weird starting, but also like we should have started a while ago. For the most part I am excited for my classes this quarter. I am taking SOC 330: Sociology of Family, SOC 345: Race, Class and Ethnicity, GEOG 142: Human Geography, SOC 491: Sociology of Education (Online class) and last but not least DANC 199: Salsa. Geography seems like it could be a really cool class, it is a lot of freshmen, but other then that it seems good. The teacher seems really interesting so hopefully that class will be a good one. I am taking Salsa and my roommate is actually taking the same class! I’m pretty excited to learn Salsa and get to take it with my roommate and a few of her friends!

Garden

My plants are all back in Eugene with me! I planted some parsley and cilantro in a pot that I had had flowers in. But I think I am more excited to have more herbs!! I will post pictures once they have sprouted and start to grow. My green beans grew beans again and I was so excited to find beans when I came back from CA most recently. Also once I had harvested the main head of broccoli there were other side heads that started growing that I harvested yesterday and had in a stir fry with my green beans! Also I have now ate 5, yes that is right 5 cucumbers that I have grown! Plus there are more on the vine still! I must say that from now on I will be growing cucumbers I love them soooo much and there is just something rewarding about eating produce that you have grown!

Projects/finishing my room

So I haven’t actually finished my quote/painting project, but I plan to do that this weekend! However I have finished my room for the most part. There are some mirrors that I want to put up over my dresser, but other then that done and organized!! Now my goal is to just keep it this way throughout the quarter! If you know me at all you know this is an ambitious goal, but one that I would really like to achieve. So here are some pictures:

Close up of the wall decal. It was a labor of love that took f-o-r-e-v-e-r! I think that was mainly because my walls are textured and the letters didn’t stick very easily to it. But it is up and I’m lovin’ it so far!

Projects and food!

Time for another update! I wanted to tell you guys about a few projects I have been working on and some yummy food!

Projects!

First off my diy project, which is one of my first big ones! The wall in my living room is big, which is great; but, it is also blank right now. So, I’m making a piece of art I guess you could say to hang on the wall! I saw this wall decal (picture to the right) on Michael’s website. But you can’t buy things online from them : ( and I couldn’t find it anywhere else online or in the stores : ( So, I decided to improvise because I really liked the quote and the fonts and everything.

What I decided to do was to stretch fabric over a frame and then paint the quote on it. My living room has a baby blue and brown thing going on so I used baby blue fabric and I am going to use brown paint. I went to Michael’s and got the frame pieces. They have quite a few different lengths of frame so you can customize the size of frame. I used 40″ and 30″ pieces. I would have wanted to go bigger, but the piece of fabric I was only so big. The pieces ranged from $2-5 so fairly inexpensive. I looked around on the internet and found this site that gave great instructions on stretching the fabric over a frame. You can get a fun patterned fabric, stretch it and then have a great piece to hang on the wall! It was relatively easy to do.

Here is my fabric stretched over the frameI’m happy with how it turned out and am ready to move onto the next step: tracing the quote onto the fabric and then painting!

Another project I have up my sleeve for when I get back is finishing my room! I spent some time down in Eugene and cleaned up my room and found pretty much everything its home (isn’t that satisfying?!). Now I just have a few finishing touches and then I will declare my room done and be done with decorating the apartment…for now at least : ) When I get back and am actually done with everything I will post pictures!

Food!

First update on my garden! I harvested my broccoli and I wish I would have taken a picture, but oh well. It was yummy yummy and now there are smaller heads starting to sprout! So hopefully in a few weeks there will be more broccoli!! Next cucumbers! I LOVE cucumbers!! I mean I REALLY LOVE cucumbers! So I have been really excited to see them grow and I have even ate one!

Baby cucumber!! Last time I counted there were around 20!!

This was the one that I ate a few days ago! As my mom said, “Vine ripened vegetables are so much better then ones from the grocery store!” I couldn’t agree more!!

This leads right into my next food topic! When I had my cucumber I made a cucumber salad. I cut the cucumber up into strips lengthwise.  For the dressing I used a vinegar I got in SLO at Farmer’s from Chaparral Gardens. The one I used was the raspberry basil vinegar and it is delicious!! I just put some of the vinegar on the cucumber slices and that was enough flavoring for me. This is partly because the vinegar is so complex and honestly delicious all on its own! I would really recommend checking out this booth at farmers because all of the vinegars are so good, they have samples and most of the bottles are only $10 such a great deal! I have also been using it in a simple oil and vinegar salad dressing, yummmm!!

Another recipe I tried out a few weeks ago. This one is a dessert called blackberry fool that is from Bobby Flay (one of my favorite food network chefs). The basic idea is layering a white chocolate blackberry whipped cream with macerated berries. Sooo good!!

In the recipe it says so mix melted white chocolate with the whipped cream. I had some issues with this part of the recipe. To have white chocolate so that it is able to pour and mix it has to be melted, to be melted it has to be hot, but that doesn’t really go well with whipped cream that needs to be cold to stay whipped. So when I started folding in the white chocolate the whipped cream started melting. I put it in the fridge, but ended up with a big chunk of hard white chocolate at the bottom of the bowl with whipped cream. The little that did get mixed in was little chunks. Maybe there is a trick of doing this and not having the whipped cream melt. However, I feel like the white chocolate is just going to harden so the next time I do this I might just chop the white chocolate chips into small pieces. Actually this might be easier to do by shaving white chocolate off of a bar. But overall it was really good, and would be even better with more white chocolate : ) Definitely worth a try, and I bet you could even use other berries. It is the end of berry season, but it is a recipe to keep in mind for next summer!

Other Updates

A few days ago I went up to Portland with some friends and it was a great time! We went to Pizza Schmizza and I had yummy Thai Chicken. Then off to Powell’s City of Books. LOVE this place and I got a few cook books! Seriously if you are ever in Portland you need to check this out. It is 4 stories and an entire block of books!! You can literally get lost and what a great place to get lost. Then we went and checked out a jazz club that Mel Brown and his band was playing at. They let minors stay till 9:30 and it was so great! I forgot how much fun it is to listen to live jazz and watch people who love what they are doing it. I can’t wait until I’m 21 and can stay the whole night and enjoy the jazz! Then we headed to the original VooDoo Donuts in downtown Portland. I love VooDoo, I think I might be slightly obsessed! After that we headed home, and it was a great fun filled night of exploring the city!

My mom and I are leaving tomorrow after she gets off work to go on a road trip and look at colleges for grad schools! I’m really excited to get to do this with her and have some quality mother-daughter time. Also I am going to be in SLO for the weekend since you can’t really tour colleges or meet with departments on the weekend. I’m pretty excited to visit because everyone will be there and of course to look at grad programs : ) I hope to be able to go to coffee and catch up with some people that I miss very very much

QUICK delicious dinner!

During spring quarter I went over to a friend’s house for dinner and we made quinoa (pronounced keen-wah, or something like that) and it was delicious!! Since then I have been itching to make it on my own for dinner. A couple weeks ago I was at Trader Joe’s and happened to see it on the shelf, so I picked it up and finally tonight made it for dinner!

A little about quinoa: It is grain like, but not quite a grain. It is has a good amount of protein 5g per serving (at least for the quinoa I bought), has fiber, carbs & low calories from fat. Overall a pretty healthy choice. You get more out of it nutritionally than rice, and it is just as easy to cook! The basic 1 part quinoa to 2 parts water. Bring to a boil. Then turn down & simmer for 10-15 minutes until all the water is absorbed. The picture above is of uncooked quinoa.

For dinner tonight I cooked 1 cup of quinoa (I only ate a little more than half tonight) according to the directions. Then I sautéed onions, green beans, broccoli and garlic while the quinoa was cooking. Chicken or beef would be good with this too, but I didn’t feel like defrosting chicken and I was getting protein from the quinoa, so I went vegetarian tonight. To give the dish a little flavor kick, I put a tablespoon of a Szechwan sauce in with the veggies. The picture to the left is of the sauce. I got it at Safeway (or Vons) at the beginning of summer and I have LOVED putting it on stir-fry!! It definitely has a kick, but in a good way. Also it is really nice because it is all in one bottle, nothing else needed! As I said earlier I put about a tablespoon on when I am cooking for myself, and that is plenty spicy/hot for me. Overall the dinner took me about 20 minutes to cook. The quinoa takes 15 minutes after the water boils, and the veggies don’t take that long to sauté. For me this is probably going to become a delicious and easy go-to dinner when I am short on time and hungry! Did I mention that quinoa is surprisingly filling?? Well it is! I am going to be keeping my eyes out for somewhere that has bulk quinoa cheep! I hope you guys give it a try!!

Also, did I mention that the green beans were ones that I grew?!?! I was so excited I had to take a picture of them before I ate them!

4 days until I fly down!! I can hardly wait!!!

Almost done with summer school! (and other updates about life)

I am approaching the last stretch of summer school! WOO! This week is going to be a busy one though! I have my thesis for 310 due Monday, 6 page paper journal about the readings for 310 due Tuesday, final in 310 Wednesday. Then next Monday I have a 6 page research project paper for 311 due, where I am going out to survey people. And finally next Wednesday I have a 5-8 page social issues paper comparing views of theorists for 310 due! I am hoping to have the papers done sooner, hopefully I can write the 310 one Thursday and Friday and then work on my 311 one over the weekend and be done Monday the 16th!!

Last night Ashley & Rachel (friends from elementary-high school) came down to my apartment in Eugene. It was really fun to hang out and make dinner! We made pizza, I must say my favorite was the BBQ chicken over the more traditional tomato sauce, pepperoni, mushroom, olive & onion. But it was nice to hang out at home and not be alone. I know that sounds really sad and depressing, but it hasn’t been all bad living by myself. I think being an only child was preparing me to live on my own for this summer. Also Gavin & I talk a lot or skype when I get lonely. BUT, I would love to talk/skype with other people and catch up on life : )

Speaking of catching up, I booked my tickets for visiting in August! I am flying down to Orange County August 20 for Vince & Angela’s wedding (which I can’t wait for! It is going to be so much fun!) Then Disneyland Sunday, which I am SO excited for especially because I have a FREE ticket!! After that I am going to be in SLO until August 31 when I am taking the train back to Salem. I am actually kind of excited to take the train back, which I normally wouldn’t be because it is a 22-24 hour train ride. But I am hoping it will be pretty with summer and the sunset. I am in no hurry to get back, so why not travel in one of the most relaxing ways?? Also it was half the price of a plane ticket out of SLO, so it is hard to beat! Can’t wait for all the fun things that I LOVE about SLO!!! Line dancing, farmers, the beach, Crusade, the drive-in …. not to mention the wonderful people who live there : ) Please let me know if you are going to be in town I want to hang out with you : ) ♥ ♥ ♥

Roommate situation update: God is sooooo good! Right now there are 4 girls (yes you read that right FOUR!) interested!! The first of the four came today to look at the place and meet. She seemed really nice and said she would get back to me early next week about her decision. The second one is coming early next week to look at the place and meet me. The other two have emailed me and we are still talking over email! I am really really really hoping & praying that one of these girls works out! I would really love for this whole situation to be resolved and the application process started by the time I go down to California! It would be so nice to not have to worry about that and just have a very relaxing vacation in California! I would appreciate any prayers for a resolved roommate situation.

Earlier this week as I was watering my veggies I noticed my green beans and broccoli have started growing! So I thought I would post some pictures. The green beans aren’t as small as when I first found them, they were such cute baby string beans! But the broccoli is still a little baby! It is just so cute!! Is it sad that I think baby vegetables I am growing are cute? Oh well, I think they are!

I have been going to CCF, and it has been good and a nice way to get to meet more people. They are going through Colossians. This last Tuesday Joe, the intern who is speaking this summer talked about the gospel and what it means to have our life hidden in Christ’s. It was just a really great reminder about what God did for us by having Jesus live a sinless life & die on the cross to atone for our sins! Sometimes I think I do not remember this enough and how amazing God is with how much he loves us! Also side note, sometimes an old man named Bud comes to CCF, I would guess he is in his 70s or 80s. I think during the school year sometimes his wife comes with him too. He comes before worship and then listens to the message. Then afterwords he hands out roses from his garden to all the women. (He only does this when roses are in season) But he is such a cute old man! So for the past 2 weeks I have had a rose from Bud in a vase on my dining room table. This is my one from this last Tuesday:

One last thing, I was going through my music today on my iTunes because my computer was getting full and I don’t listen to A LOT of the music on my computer (I had over 5,000 songs!) Then I was just listening to random music and I came across a song called Come Save by Sarah Reeves, and have pretty much fallen in love with this song! These were some of the lyrics that really spoke to me:

Life Update

This last weekend one of my cousins got married. It was fun to see family and everything since I didn’t go to the family reunion last weekend. Also another cousin of mine had a party/reception because he got married a while ago, but never had a reception or anything. So Saturday was a very busy day!! I drove up to Salem Saturday morning then went with my parents to Woodburn (between Salem and Portland for people not from OR) and went to their service it was nice, but long as Catholic things usually are. I thought it was interesting the scripture that was read. I can only remember what was read for the gospel, which was the story of how Jesus turns water into wine. I just thought there was a lot more relevant scripture that applies to marriage than this. The priest made it work, but it felt kind of like a stretch when there is SO many more relevant passages elsewhere in the New Testament (and I’m sure Old as well). Yet, the Catholic church limits itself by making the main scripture reading/homily (sermon) about a reading from the Gospels. Anyway, I got a little off topic. So that was fun, the one kind of downside was that both of the receptions were outside and it was around 90. So it was HOT! But it was a nice way to spend a Saturday

Sunday I went with my parents and got a bike! The bike I had before was from 3rd grade, and not rideable. So I am pretty excited and it has made getting to school a lot faster and easier! Also I have been proud of myself for riding to and from school these past two days! If you knew me in high school or younger, you would know this is a big accomplishment! Maybe later I will add a picture of my bike. It is a pretty Poly/UO green : )

Also, update on the roommate situation: There have been a few roommates since I last wrote that haven’t worked out. HOWEVER, I had two girls who are both Christian email me last week, and I think one is going to come down to look at the apartment/meet each other so I am really hoping one of these works out! It would be a HUGE answer to my prayers. But if one of these girls doesn’t work out I know God has something else up his sleeves!!

I am getting really excited to come down for Vince and Angela’s wedding! I am pretty sure I am flying down Thursday either into SLO or San Jose. Then I am staying in SLO for a week after the wedding!! Also we (Gavin, Garret and myself) might be going to another wedding for their Grandma the next weekend, but we will see if that all works out. But over all it will be a really nice vacation and time to relax and have a real summer with no school! Also I want to see as many of you as I can while I am down there. So if you are going to be in SLO between August 19-30 let me know and we could figure out a time to hang out! I can’t wait to see all of your lovely faces again and spend some time in one of my favorite places!!

Half way through the term!

So it has taken me a while to update again. I guess you could say it is because I had a lot going on with school and was really busy, but really I was just putting it off. Anyway…

Since the last time I wrote I found a roommate and we got along great and everything. But then after we decided she would live here and apply to the rental company a few days later she emailed me and decided she needed to live some where less expensive. So that was a bummer and really frustrating. I’m just really exhausted by the whole situation and am ready to have it all figured out and done. But that isn’t really how it works. So as I am getting to know more people here I am starting to have more people to see if they know people who are looking for housing. I’m just trying not to stress about it and know that God has a plan and it will all work out. Sometimes you just have to be patient and wait on the Lord! Seriously as I was writing this another girl just called me interested about the apartment!!! God is so faithful and surprising!!!

This week was been busy! Half way through the term now. Tuesday I had music project due and then Thursday I had a music midterm. Yesterday I had a refection paper due online for my sociology class! So I was keeping busy busy! Next week I have a music paper due Tuesday, midterm in sociology Wednesday and then the week after that is the last week! The term is going by so fast! But that is what happens in a 4 week term!

Last Monday was my birthday, which was nice. Sunday I went out to dinner with my parents and Ashley. Then Monday Johanna and I went to dinner with here in Eugene and then to a really cute bakery. I went to class and had a dentist appointment, so those were kind of a bummer but oh well.

Tuesday I went to CCF again it was good we talked about prayer looking at Colossians 1. It is really nice to start getting to know people more and building friendships. Next week the girl who has been cooking dinner is going to be out of town, so I am cooking dinner! I have never cooked for that many people (between 25-30) so we will see how that goes. I think I keep wanting it to feel like Crusade and for bible study to feel like my old bible study in SLO, but it never will. It doesn’t really work like that. But it is good.

I am starting to get aquatinted with Eugene and able to find my way around the city. Yesterday I found my way to Home Depot and got some plants, herbs, and veggies to grow! I’m hoping they actually grow. We will see, but it will be fun no matter what! Even though I am starting to get familiar with the town it still doesn’t feel like home yet. I don’t know if it ever will. I guess I have been feeling kind of homesick recently, even though I am closer to home. Doesn’t really make sense, but I guess SLO is more home now.

I am pretty much moved in by now. I still have to bring my desk down and a dresser. So my room still has some boxes. It is weird living alone, I think it is part of what is making me more lonely. But it is good, makes me more motivated to go make friends!

I’m not sure what my plans are for the 4th tomorrow. I am heading back tonight, so I think I will be hanging out with the parents tomorrow. We will see what happens, but I’m sure there will be BBQ and fireworks!
