Everything but the kitchen sink

It has been forever since I have updated and there is much to update about!! So lets get going!

The rest of summer

First off, my mom and I went on a road trip to look at schools for grad school. I want to do a school counselor program. It was fun to take a road trip and spend time with my mom. I went to Sac State, San Jose State and St. Mary’s. Of the three I liked St. Mary’s, but for $25,000+ a year it should be the program that was most appealing! Honestly Sac State was the least impressive, and I would want to try my hardest to not go there. The campus and feel of the school just didn’t stand out to me. Did that happen to any of you while looking at colleges?? Did you like the school that cost the most? I’m still not sure whether I want to do grad school right away. Right now I am leaning more towards taking a year off, but we will see how everything ends up. Honestly I need to pray about it a LOT more because I really don’t know what the Lord has in store for me next year. It is slightly crazy to me that I am already thinking about plans for next year when I have literally just started fall team.

Other then looking at schools my mom and I visited SLO Saturday night until Wednesday morning. It was really great to hang out and get to spend time there and see so many wonderful people! My mom and I stayed at Apple Farm which was so much fun! We got to do a lot of things that I love in SLO including going to Avila! It was super windy, but still great just to be at the ocean! I picked up some rocks and stuff for another little project in my living room : ) It was great getting to spend some quality time with Gavin before being apart for almost 2 months, which will be our longest time apart so far. Also I loved getting to go to Crusade and seeing everyone there! I also got to go to Jesus burgers for a little and the slack street party. All of it was so great to go to! Being away makes me realize how unique and special the community is there. Seriously that many college students who are seeking, on fire for and loving Jesus is amazing! It makes me want that kind of community here in Eugene. I feel so blessed to have been able to spent 2 years in that amazing transformational community. SLO, Crusade and the people there have made a lasting impact on my life and it was really great to be able to experience that one more time before coming up here for the year. Also I loved getting to catch up on life with people and I truly wish I had the time to get to talk more in depth with more people to hear about their summers and how God was working in their lives this summer. But, that is why there is skype right?  ; ) It was so great to see so many people that I care about, it made me miss you all less!! I had been hearing about people’s lives from Gavin, but it was great to actually talk to people and hear from them, not that I don’t appreciate the updates Gavin : )

So then I came back and I was home for a day then I came down to Eugene to get settled in before school started. Friday night I was bored so I baked cupcakes for the UO game Saturday. I had seen the cook books Hello Cupcake and Whats New Cupcake at the Jelly Belly factory (where my mom and I got belly flops SO GREAT!) and was inspired. So I was ambitious and decided to make Oregon O decorations for my cupcakes. My yellow Os set up nicely, but I didn’t make them as thick as I should have, so some broke. However my green Os did not set up very well. I think it was because I was working on the counter that is above my dishwasher so the heat from that made the chocolate set up funny. I got the colored melting chocolate from Michael’s and it tasted just like white chocolate and wasn’t too pricey!  Here is the finished product:The basic idea with the melted chocolate is to have a design or pattern under a piece of parchment paper and then pipe the chocolate in the design and let it set. To make it easier to put the decorations on the cupcakes I made a point to stick into the cupcake. I don’t have a picture, but you get the idea. Overall pretty easy to make plain cupcakes a little more fun! Not to mention the Ducks won Saturday against Arizona State!! WOOOOO!!! Saturday we play Stanford it is going to be a close game, but hopefully a good one with a Oregon W! I am hoping to get a ticket to be able to experience a Pac-10 game as a student, but we will see. It is really hard to get tickets because they only have around 4,000 student tickets. Anyway, Sunday I went back to Salem for Ashley and Matt’s engagement party. It was a great BBQ and nice to see family friends. Then I came back to Eugene to get ready for school Monday!

School

School started Monday and it felt really weird starting, but also like we should have started a while ago. For the most part I am excited for my classes this quarter. I am taking SOC 330: Sociology of Family, SOC 345: Race, Class and Ethnicity, GEOG 142: Human Geography, SOC 491: Sociology of Education (Online class) and last but not least DANC 199: Salsa. Geography seems like it could be a really cool class, it is a lot of freshmen, but other then that it seems good. The teacher seems really interesting so hopefully that class will be a good one. I am taking Salsa and my roommate is actually taking the same class! I’m pretty excited to learn Salsa and get to take it with my roommate and a few of her friends!

Garden

My plants are all back in Eugene with me! I planted some parsley and cilantro in a pot that I had had flowers in. But I think I am more excited to have more herbs!! I will post pictures once they have sprouted and start to grow. My green beans grew beans again and I was so excited to find beans when I came back from CA most recently. Also once I had harvested the main head of broccoli there were other side heads that started growing that I harvested yesterday and had in a stir fry with my green beans! Also I have now ate 5, yes that is right 5 cucumbers that I have grown! Plus there are more on the vine still! I must say that from now on I will be growing cucumbers I love them soooo much and there is just something rewarding about eating produce that you have grown!

Projects/finishing my room

So I haven’t actually finished my quote/painting project, but I plan to do that this weekend! However I have finished my room for the most part. There are some mirrors that I want to put up over my dresser, but other then that done and organized!! Now my goal is to just keep it this way throughout the quarter! If you know me at all you know this is an ambitious goal, but one that I would really like to achieve. So here are some pictures:

Close up of the wall decal. It was a labor of love that took f-o-r-e-v-e-r! I think that was mainly because my walls are textured and the letters didn’t stick very easily to it. But it is up and I’m lovin’ it so far!

Projects and food!

Time for another update! I wanted to tell you guys about a few projects I have been working on and some yummy food!

Projects!

First off my diy project, which is one of my first big ones! The wall in my living room is big, which is great; but, it is also blank right now. So, I’m making a piece of art I guess you could say to hang on the wall! I saw this wall decal (picture to the right) on Michael’s website. But you can’t buy things online from them : ( and I couldn’t find it anywhere else online or in the stores : ( So, I decided to improvise because I really liked the quote and the fonts and everything.

What I decided to do was to stretch fabric over a frame and then paint the quote on it. My living room has a baby blue and brown thing going on so I used baby blue fabric and I am going to use brown paint. I went to Michael’s and got the frame pieces. They have quite a few different lengths of frame so you can customize the size of frame. I used 40″ and 30″ pieces. I would have wanted to go bigger, but the piece of fabric I was only so big. The pieces ranged from $2-5 so fairly inexpensive. I looked around on the internet and found this site that gave great instructions on stretching the fabric over a frame. You can get a fun patterned fabric, stretch it and then have a great piece to hang on the wall! It was relatively easy to do.

Here is my fabric stretched over the frameI’m happy with how it turned out and am ready to move onto the next step: tracing the quote onto the fabric and then painting!

Another project I have up my sleeve for when I get back is finishing my room! I spent some time down in Eugene and cleaned up my room and found pretty much everything its home (isn’t that satisfying?!). Now I just have a few finishing touches and then I will declare my room done and be done with decorating the apartment…for now at least : ) When I get back and am actually done with everything I will post pictures!

Food!

First update on my garden! I harvested my broccoli and I wish I would have taken a picture, but oh well. It was yummy yummy and now there are smaller heads starting to sprout! So hopefully in a few weeks there will be more broccoli!! Next cucumbers! I LOVE cucumbers!! I mean I REALLY LOVE cucumbers! So I have been really excited to see them grow and I have even ate one!

This was the one that I ate a few days ago! As my mom said, “Vine ripened vegetables are so much better then ones from the grocery store!” I couldn’t agree more!!

This leads right into my next food topic! When I had my cucumber I made a cucumber salad. I cut the cucumber up into strips lengthwise.  For the dressing I used a vinegar I got in SLO at Farmer’s from Chaparral Gardens. The one I used was the raspberry basil vinegar and it is delicious!! I just put some of the vinegar on the cucumber slices and that was enough flavoring for me. This is partly because the vinegar is so complex and honestly delicious all on its own! I would really recommend checking out this booth at farmers because all of the vinegars are so good, they have samples and most of the bottles are only $10 such a great deal! I have also been using it in a simple oil and vinegar salad dressing, yummmm!!

Another recipe I tried out a few weeks ago. This one is a dessert called blackberry fool that is from Bobby Flay (one of my favorite food network chefs). The basic idea is layering a white chocolate blackberry whipped cream with macerated berries. Sooo good!!

In the recipe it says so mix melted white chocolate with the whipped cream. I had some issues with this part of the recipe. To have white chocolate so that it is able to pour and mix it has to be melted, to be melted it has to be hot, but that doesn’t really go well with whipped cream that needs to be cold to stay whipped. So when I started folding in the white chocolate the whipped cream started melting. I put it in the fridge, but ended up with a big chunk of hard white chocolate at the bottom of the bowl with whipped cream. The little that did get mixed in was little chunks. Maybe there is a trick of doing this and not having the whipped cream melt. However, I feel like the white chocolate is just going to harden so the next time I do this I might just chop the white chocolate chips into small pieces. Actually this might be easier to do by shaving white chocolate off of a bar. But overall it was really good, and would be even better with more white chocolate : ) Definitely worth a try, and I bet you could even use other berries. It is the end of berry season, but it is a recipe to keep in mind for next summer!

Other Updates

A few days ago I went up to Portland with some friends and it was a great time! We went to Pizza Schmizza and I had yummy Thai Chicken. Then off to Powell’s City of Books. LOVE this place and I got a few cook books! Seriously if you are ever in Portland you need to check this out. It is 4 stories and an entire block of books!! You can literally get lost and what a great place to get lost. Then we went and checked out a jazz club that Mel Brown and his band was playing at. They let minors stay till 9:30 and it was so great! I forgot how much fun it is to listen to live jazz and watch people who love what they are doing it. I can’t wait until I’m 21 and can stay the whole night and enjoy the jazz! Then we headed to the original VooDoo Donuts in downtown Portland. I love VooDoo, I think I might be slightly obsessed! After that we headed home, and it was a great fun filled night of exploring the city!

My mom and I are leaving tomorrow after she gets off work to go on a road trip and look at colleges for grad schools! I’m really excited to get to do this with her and have some quality mother-daughter time. Also I am going to be in SLO for the weekend since you can’t really tour colleges or meet with departments on the weekend. I’m pretty excited to visit because everyone will be there and of course to look at grad programs : ) I hope to be able to go to coffee and catch up with some people that I miss very very much

The rest of my vacation in San Luis Obispo

It has been a while since I have updated, and I don’t really feel like writing a lot so I am going to do a recap of the rest of my vacation in photos!

All in all it was a really relaxing vacation. Since I have been back in Oregon I have been just relaxing at home a lot and hanging out with my parents. I am going down to Eugene next week and hanging out in Salem until then. I have a few projects in mind, but I will post about them later once they are further along.

I loved getting to see so many people while I was in SLO, but was kind of bummed I didn’t get to catch up with and actually talk with as many people as I wanted to. But I guess that is what skype and the phone are for, so I’m hoping to skype and catch up with some people that I miss dearly before school starts : )

Oh and lastly I am almost done with Mere Christianity by C.S. Lewis! I am loving it and will probably give a review/thoughts on the book once I am done in the next day or two!

Vacation in California

So I finished summer school and it was time for VACATION!! Basically I was really excited to come down and just get to relax and spend sometime down here with some pretty great people   : )

Friday: I got up early and went up to Portland to catch my plane. My dad and I made a stop along the way to pick up a surprise for Gavin. Then I had a layover in Vegas and ended up getting my boots shined, they look gooooood! I caught my plane to Orange County where Gavin picked me up! I gave him his surprise, which was donuts from Voo Doo. I had been eating them in front of him on skype, so I figured I would let him enjoy some with me. The picture to the right is of Gavin with a maple bacon bar, which isn’t as weird as it sounds. When you think of the donut as a pancake, the maple frosting as maple syrup, and then bacon it works! You can ask Gavin if you don’t believe me, or I will post a video on Facebook of Gavin eating it! I also brought us Voo Doo dolls (SO GOOD!) and a few others. So we hung out at Newport Beach and ate Voo Doo donuts and just relaxed. We went in the water a little and drove around Newport. I had never been there so it was fun to go around and explore. Let me just say The OC did not accurately portray Newport! So then we left Newport and continued on our adventure South. We drove through Laguna Beach and a few other towns then we stopped in Dana Point. The Ocean Institute wasn’t open, but we went down to where you can go look at the tide pools, but the tide was high, so we just watched the waves! The ocean is just so relaxing to watch. We played around on the stairs racing the waves in. To the left is us at Dana Point with the ocean behind us. It was so pretty!! I would love to go back sometime when the tide is lower and be able to check out the tide pools and all the cool little sea creatures that live there! We were off from Dana Point and headed South again. We hit some traffic around San Clemente, so we decided to just get off and have dinner there. It took us about 20 minutes to find a parking spot that was somewhat near the pier/beach. We went down to the road that is right by the beach and got some pizza (white sauce with chicken SO YUMMY!) Then we took it to the beach, which was right across the street and watched the suffers and the sunset and enjoyed our pizza. Over all it was a really relaxing dinner/evening. Also it was fun to watch all the suffers ride the waves. I felt very SoCal! The picture to the right is of Gavin and me relaxing and enjoying the sunset. Life doesn’t get much better does it?  : )

After San Clemente Krista met Gavin and me in Oceanside and I went with Krista down to her house to stay the night before Vince and Angela’s wedding. Overall Friday was a very busy and fun day of exploring Orange county!!

Saturday: During the late morning Krista’s family and myself played settlers. It was fun and Krista won, but only because we let her interim build that one time : ) Then Krista and I got ready for the wedding and headed up to Trabuco Canyon for the wedding. It was a really nice ceremony and then we headed over to the reception. It was a really fun night and great to celebrate Vince and Angela. Also it was great to get to see friends from Poly again and get to have a great time with them! Angela (and Vince) planned a wonderful wedding and I had a great time! The picture to the left is of Vince, Gavin, me and Angela. These two have become such great friends of both Gavin and mine over the past two years we were honored to get to share their special day with them!

I will say though it was a little strange to go to a wedding of our friends. I guess it is that time in our lives where our friends start getting married. I know this is just the beginning and in the next 5-10 years more and more of our friends are going to be getting married! It makes me realize that I am getting older, growing up and this is what people do during this time of life. Not that I haven’t thought about this before, but that it has actually started happening didn’t quite seem real at first. I don’t know if any of that made sense, but if it didn’t thats ok!

Sunday: Gavin, Garret and I went to Disneyland!! I love Disneyland so much and it was even better because we used our free ticket from volunteering so we didn’t have to pay to get in! I will let pictures do the talking because a picture says 1,000 words, right?

Monday: I relaxed! I was so worn out from everything that I pretty much slept all day!! I went to a surprise going away party for Quinn that was really fun and great to see everyone. Then Gavin and I watched Dear John and then I pretty much crashed!

Tuesday (Yesterday): Gavin and I went to Pismo and Gavin took me boogie boarding! We took pictures, but I forgot to put my main memory card in, so I don’t have a way of getting them off until I get back to Eugene. But it was really fun!! Then we went to Old West Cinnamon Rolls. They were soooo good!! I got a mix to make once I am back in Eugene! Then Gavin and I made dinner. I think I am going to post the recipe, so I won’t write about it here. But it was delicious! Then we went to Summer Crusade! Nick Weber was speaking and it was so great! I always love when he talks. It makes me wish I had gone to the rain while I was here, but oh well can’t go back in time. But he was talking about how the Gospel needs to be central in our lives as Christians and how we can preach the Gospel to ourselves every day. I could write a whole blog on that, but I don’t think I will right now.

Wednesday (Today!): Today has been pretty relaxing as well. Gavin came over to Krista and Nicoles condo (where I am staying) and we have been hanging out. In a little Gavin and Garret are going to take me rock climbing! I am pretty excited I have never been before so we will see how that goes!! I’m sure I will have a few pictures to post later.

Ok if you are still reading this props to you! I am impressed! I think I went a little long because I want to be able to remember everything!! I hope you enjoyed reading this extremely long post, and if you are in SLO let me know!! I would love to see as many people as I can while I am down here!!

Things that happened before coming to California

So, last I updated I had met Tyler’s friend Alexa who was possibly looking for a roommate. Well, we had coffee and talked and she came over to look at the apartment, and…..WE ARE GOING TO BE ROOMMATES!!! Honestly I am so excited! We click and seem to get along really well! Plus she loves Jesus, and it has been evident in the small amount of time I have been able to spend with her. Looking back on this whole process I realize that with all the other girls I was usually settling for someone who didn’t know the Lord or wasn’t actively walking with Him.  I was just happy to have someone to occupy the other room and share half the rent with. But, as always, God had a bigger plan for my roommate situation. All of those other girls didn’t work out so that Alexa and I could meet and be able to live together! In the end I’m so glad that I waited on the Lord, and of course His plan was better than anything I thought of myself! So once I get back to Oregon Alexa is going to move in! I’m so excited!!

Other news: SUMMER SCHOOL IS OVER!!! The last week was a little rough with a final and then two essays, but I got them done! And now it is summer! WOOO!! I will say taking 16 units over summer was a little crazy and I would never do it again. But it was worth it to be able to graduate in the Spring! AHHH! Sometimes it still doesn’t seem real that I am graduating in less than a year. I still have no clue what I am going to do the next year. Either move back to SLO and work or go onto grad school. I have fall quarter to figure that out, mainly because I would have to apply to grad school by February.  So that will be something to think about and pray a lot about in these next few months.

Also, I found the church that I think is going to be my home church in Eugene! I am really excited! It is the church Alexa usually goes to, but the Sunday I was going she couldn’t make it. So I went alone, but as soon as I got there people introduced themselves and were very welcoming. The worship was great and the message was based in the word and focused on Jesus. Also a girl who introduced herself and asked if it was my first time asked if I wanted to go to coffee and get to know each other. It actually reminded me a lot of Calvary, and maybe that is a comfort thing wanting a church that is similar. When I left the service I was kind of bummed that I wouldn’t be able to go again for about a month (between being in California and Salem), so I feel like that was a sign that it is a church that I can become a member of and grow a lot in this next year!

Overall I am actually looking forward to fall quarter and all the things that the Lord has in store for me!

I don’t feel like writing my paper….so I am going to write on here

Thursday night going out to camp Harlow and the campfire was a really great night. There were skits (most of which were kind of inside jokes, so I didn’t totally get them) and songs, and worship. Overall it was really great night! There was this one presentation, it wasn’t really a skit because there wasn’t anyone talking. But it was like a visual representation of sin and the Gospel. A person put a chair with a sign taped to it that read sin. There was music playing and then a girl from the leadership team was up on stage. She would look at the chair and think about it, and then walk away, then look back at it. Finally she went over to and was looking at the chair and finally touched it, just with one finger, but she touched it. And she was stuck, she couldn’t take her finger away from the chair. She tried so hard, but couldn’t. Then her hand got stuck on the chair. After that two girls who seemed to be friends walked up on stage. They waved at her, but she stood in front of the sign that said sin, and tried to act as normal as possible. This process went on, until she was kneeling/sitting on the chair and totally stuck, heartbroken and crying. Then a man came up on stage. Slowly, little by little, he took her hands and legs off the chair. Then he took her place on the chair. Finally he threw the chair off the stage (it was outside, so he threw it onto some dirt) symbolizing the defeat of sin. It was just such a real and beautiful picture of Jesus coming and saving us from sin.

He died so that we could have life.

What a beautiful thing? I can’t think of anything more beautiful and filled with love. So much so that had tears coming down my face by the time he finally tossed the chair off stage. I wish I had taken a video of it so other people could have seen it, but I didn’t so my description will just have to do.

Also Thursday night I met one of Tyler’s friends who is on the leadership team out at Harlow and she is possibly looking for a roommate and a new place to live. So that is really exciting! She seems really nice. Talking with her it was evident that she has a fire and passion for the Lord. It was so awesome and refreshing to talk to another woman that has that fire! It reminded me of friendships from SLO, and that was just really great! Tomorrow I am going to go to the church she normally goes to, and then we are going to have lunch and she is going to come look at the apartment! I am looking forward to checking out another church down here, and hopefully getting closer to finding a home church. One other thing, she is part of a bible study of women who are really getting into the word and talking about what it is saying. I’m pretty excited to go check this out too, probably once I get back from California. But I really want to find a solid group of women to become a part of, because especially at the end of the year I was really coming to realize how important fellowship and community with other sisters in Christ is for my relationship with the Lord and just my life in general!!

These past few days I have been in pseudo-summer. Basically not having class or any commitments, but having school work to do. I think it might be worse than having class because summer is so close, yet so far!! Well now off to make it a little closer and work on my 311 paper

p.s. I fly into California in less than a week! And in less than a week Vince and Angela will be married!! So exciting!!!!

p.p.s. I am wanting some good books to read while on vacation! Any suggestions??? I think Mere Christianity by C.S. Lewis will be one, but I have a feeling I am going to finish that and want some others to read! I am open to suggestions!!

Summer is soooo close!

On the upside I had my last day of classes yesterday, on the downside I have 2 8-page papers due next Wednesday (eeeekk)! But for the most part I am feeling good and so excited to be getting closer to a real summer with no school!!!

Roommate update: Things are going well. Two girls have come to look at the apartment in the last week. One decided to live somewhere else and the other hasn’t gotten back to me. There are still 2 girls that have emailed me that I am still talking with. So I just keep asking God for guidance and trusting that in the end His plan is perfect, and He will work it out!
Tyler Bierce is visiting Eugene, where he grew up. We had brunch today and it was nice to catch up & hang out with a familiar face! Tonight there is a campfire thing out at the camp he used to work at, so I am going to go out and meet some people and have a good time! It was really nice talking with him and he gave me some suggestions of churches to check out here in Eugene, and I am really excited to go and check those out!!

So in the subheading of this I listed cooking, and I had every intention of posting about things I cook, but I haven’t yet. SO, I am going to start! This is a pretty simple pasta dish and I think it is quite yummy! I just put it together at one point, so it doesn’t have a name….I guess I will call it Southwest Pasta! I don’t really measure, but you can put as much or little of everything as you want. Also it would be good with some chicken too! So here is the recipe:

  • Pasta of your choice (I like the shells)
  • Onion (I usually put about 1/2 and onion in)
  • Sliced mushrooms (I like 6 or 7 sliced up)
  • 1 clove garlic – chopped
  • Frozen cut corn
  • Emeril’s Essence (recipe below)
  • Grated cheddar cheese, or shredded Mexican cheese blend
  • Chopped cilantro (if desired for garnish)

Boil a pot of water & cook the pasta. While the pasta is cooking sauté the onions and mushrooms in a large pan. Add the garlic a few minutes after. Once they have been sautéing for a while add the frozen corn (you can use fresh, but if I have fresh corn I like to eat it on the cob!). To help the corn cook add a little of the pasta cooking water. Drain the pasta and add it to the veggies in the pan. Sprinkle some of Emeril’s Essence on the pasta & veggies, mix together. Add the cheese & mix together.  You can either add the cheese in the pan or in a serving bowl if you are going to do that. Top with cilantro if you have it/want it (I didn’t have any this last time I made it).

And heres the final product:

Emeril’s Essence (recipe from Food Network):

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Combine all spices together. I just made a bunch at one time & have it stored in a big old spice jar. It is great on chicken & burgers too! It is a great way to easily add some flavor & it has a little bit of a kick!

I fly down a week from Friday! Can’t wait to get to hang out in SLO & see everyone!! Hope you all have a wonderful weekend!
