Easy marinade for chicken or salmon

I found this marinade a while ago and I have loved it! I usually let the marinade sit for 20-30 minutes and then put it on the grill, or put it in the oven to bake, but grilling it so good! The picture to the right is of chicken Gavin and I grilled the other night.

  • overflowing 1/4 cup of honey
  • 1/4 cup soy sauce (low sodium if you want to be more healthy)
  • 2 cloves garlic chopped
  • 2 limes juiced
  • cilantro chopped

You can play around with the proportions to make it more or less sweet or salty depending on how much soy sauce or honey you put in. But it has become an easy go to marinade to make chicken a little less boring.

Gavin and I had steamed broccoli and grilled corn with our chicken and it was a very delicious summer dinner! Enjoy!!

Vacation in California

So I finished summer school and it was time for VACATION!! Basically I was really excited to come down and just get to relax and spend sometime down here with some pretty great people   : )

Friday: I got up early and went up to Portland to catch my plane. My dad and I made a stop along the way to pick up a surprise for Gavin. Then I had a layover in Vegas and ended up getting my boots shined, they look gooooood! I caught my plane to Orange County where Gavin picked me up! I gave him his surprise, which was donuts from Voo Doo. I had been eating them in front of him on skype, so I figured I would let him enjoy some with me. The picture to the right is of Gavin with a maple bacon bar, which isn’t as weird as it sounds. When you think of the donut as a pancake, the maple frosting as maple syrup, and then bacon it works! You can ask Gavin if you don’t believe me, or I will post a video on Facebook of Gavin eating it! I also brought us Voo Doo dolls (SO GOOD!) and a few others. So we hung out at Newport Beach and ate Voo Doo donuts and just relaxed. We went in the water a little and drove around Newport. I had never been there so it was fun to go around and explore. Let me just say The OC did not accurately portray Newport! So then we left Newport and continued on our adventure South. We drove through Laguna Beach and a few other towns then we stopped in Dana Point. The Ocean Institute wasn’t open, but we went down to where you can go look at the tide pools, but the tide was high, so we just watched the waves! The ocean is just so relaxing to watch. We played around on the stairs racing the waves in. To the left is us at Dana Point with the ocean behind us. It was so pretty!! I would love to go back sometime when the tide is lower and be able to check out the tide pools and all the cool little sea creatures that live there! We were off from Dana Point and headed South again. We hit some traffic around San Clemente, so we decided to just get off and have dinner there. It took us about 20 minutes to find a parking spot that was somewhat near the pier/beach. We went down to the road that is right by the beach and got some pizza (white sauce with chicken SO YUMMY!) Then we took it to the beach, which was right across the street and watched the suffers and the sunset and enjoyed our pizza. Over all it was a really relaxing dinner/evening. Also it was fun to watch all the suffers ride the waves. I felt very SoCal! The picture to the right is of Gavin and me relaxing and enjoying the sunset. Life doesn’t get much better does it?  : )

After San Clemente Krista met Gavin and me in Oceanside and I went with Krista down to her house to stay the night before Vince and Angela’s wedding. Overall Friday was a very busy and fun day of exploring Orange county!!

Saturday: During the late morning Krista’s family and myself played settlers. It was fun and Krista won, but only because we let her interim build that one time : ) Then Krista and I got ready for the wedding and headed up to Trabuco Canyon for the wedding. It was a really nice ceremony and then we headed over to the reception. It was a really fun night and great to celebrate Vince and Angela. Also it was great to get to see friends from Poly again and get to have a great time with them! Angela (and Vince) planned a wonderful wedding and I had a great time! The picture to the left is of Vince, Gavin, me and Angela. These two have become such great friends of both Gavin and mine over the past two years we were honored to get to share their special day with them!

I will say though it was a little strange to go to a wedding of our friends. I guess it is that time in our lives where our friends start getting married. I know this is just the beginning and in the next 5-10 years more and more of our friends are going to be getting married! It makes me realize that I am getting older, growing up and this is what people do during this time of life. Not that I haven’t thought about this before, but that it has actually started happening didn’t quite seem real at first. I don’t know if any of that made sense, but if it didn’t thats ok!

Sunday: Gavin, Garret and I went to Disneyland!! I love Disneyland so much and it was even better because we used our free ticket from volunteering so we didn’t have to pay to get in! I will let pictures do the talking because a picture says 1,000 words, right?

Monday: I relaxed! I was so worn out from everything that I pretty much slept all day!! I went to a surprise going away party for Quinn that was really fun and great to see everyone. Then Gavin and I watched Dear John and then I pretty much crashed!

Tuesday (Yesterday): Gavin and I went to Pismo and Gavin took me boogie boarding! We took pictures, but I forgot to put my main memory card in, so I don’t have a way of getting them off until I get back to Eugene. But it was really fun!! Then we went to Old West Cinnamon Rolls. They were soooo good!! I got a mix to make once I am back in Eugene! Then Gavin and I made dinner. I think I am going to post the recipe, so I won’t write about it here. But it was delicious! Then we went to Summer Crusade! Nick Weber was speaking and it was so great! I always love when he talks. It makes me wish I had gone to the rain while I was here, but oh well can’t go back in time. But he was talking about how the Gospel needs to be central in our lives as Christians and how we can preach the Gospel to ourselves every day. I could write a whole blog on that, but I don’t think I will right now.

Wednesday (Today!): Today has been pretty relaxing as well. Gavin came over to Krista and Nicoles condo (where I am staying) and we have been hanging out. In a little Gavin and Garret are going to take me rock climbing! I am pretty excited I have never been before so we will see how that goes!! I’m sure I will have a few pictures to post later.

Ok if you are still reading this props to you! I am impressed! I think I went a little long because I want to be able to remember everything!! I hope you enjoyed reading this extremely long post, and if you are in SLO let me know!! I would love to see as many people as I can while I am down here!!

Things that happened before coming to California

So, last I updated I had met Tyler’s friend Alexa who was possibly looking for a roommate. Well, we had coffee and talked and she came over to look at the apartment, and…..WE ARE GOING TO BE ROOMMATES!!! Honestly I am so excited! We click and seem to get along really well! Plus she loves Jesus, and it has been evident in the small amount of time I have been able to spend with her. Looking back on this whole process I realize that with all the other girls I was usually settling for someone who didn’t know the Lord or wasn’t actively walking with Him.  I was just happy to have someone to occupy the other room and share half the rent with. But, as always, God had a bigger plan for my roommate situation. All of those other girls didn’t work out so that Alexa and I could meet and be able to live together! In the end I’m so glad that I waited on the Lord, and of course His plan was better than anything I thought of myself! So once I get back to Oregon Alexa is going to move in! I’m so excited!!

Other news: SUMMER SCHOOL IS OVER!!! The last week was a little rough with a final and then two essays, but I got them done! And now it is summer! WOOO!! I will say taking 16 units over summer was a little crazy and I would never do it again. But it was worth it to be able to graduate in the Spring! AHHH! Sometimes it still doesn’t seem real that I am graduating in less than a year. I still have no clue what I am going to do the next year. Either move back to SLO and work or go onto grad school. I have fall quarter to figure that out, mainly because I would have to apply to grad school by February.  So that will be something to think about and pray a lot about in these next few months.

Also, I found the church that I think is going to be my home church in Eugene! I am really excited! It is the church Alexa usually goes to, but the Sunday I was going she couldn’t make it. So I went alone, but as soon as I got there people introduced themselves and were very welcoming. The worship was great and the message was based in the word and focused on Jesus. Also a girl who introduced herself and asked if it was my first time asked if I wanted to go to coffee and get to know each other. It actually reminded me a lot of Calvary, and maybe that is a comfort thing wanting a church that is similar. When I left the service I was kind of bummed that I wouldn’t be able to go again for about a month (between being in California and Salem), so I feel like that was a sign that it is a church that I can become a member of and grow a lot in this next year!

Overall I am actually looking forward to fall quarter and all the things that the Lord has in store for me!

QUICK delicious dinner!

During spring quarter I went over to a friend’s house for dinner and we made quinoa (pronounced keen-wah, or something like that) and it was delicious!! Since then I have been itching to make it on my own for dinner. A couple weeks ago I was at Trader Joe’s and happened to see it on the shelf, so I picked it up and finally tonight made it for dinner!

A little about quinoa: It is grain like, but not quite a grain. It is has a good amount of protein 5g per serving (at least for the quinoa I bought), has fiber, carbs & low calories from fat. Overall a pretty healthy choice. You get more out of it nutritionally than rice, and it is just as easy to cook! The basic 1 part quinoa to 2 parts water. Bring to a boil. Then turn down & simmer for 10-15 minutes until all the water is absorbed. The picture above is of uncooked quinoa.

For dinner tonight I cooked 1 cup of quinoa (I only ate a little more than half tonight) according to the directions. Then I sautéed onions, green beans, broccoli and garlic while the quinoa was cooking. Chicken or beef would be good with this too, but I didn’t feel like defrosting chicken and I was getting protein from the quinoa, so I went vegetarian tonight. To give the dish a little flavor kick, I put a tablespoon of a Szechwan sauce in with the veggies. The picture to the left is of the sauce. I got it at Safeway (or Vons) at the beginning of summer and I have LOVED putting it on stir-fry!! It definitely has a kick, but in a good way. Also it is really nice because it is all in one bottle, nothing else needed! As I said earlier I put about a tablespoon on when I am cooking for myself, and that is plenty spicy/hot for me. Overall the dinner took me about 20 minutes to cook. The quinoa takes 15 minutes after the water boils, and the veggies don’t take that long to sauté. For me this is probably going to become a delicious and easy go-to dinner when I am short on time and hungry! Did I mention that quinoa is surprisingly filling?? Well it is! I am going to be keeping my eyes out for somewhere that has bulk quinoa cheep! I hope you guys give it a try!!

Also, did I mention that the green beans were ones that I grew?!?! I was so excited I had to take a picture of them before I ate them!

4 days until I fly down!! I can hardly wait!!!

I don’t feel like writing my paper….so I am going to write on here

Thursday night going out to camp Harlow and the campfire was a really great night. There were skits (most of which were kind of inside jokes, so I didn’t totally get them) and songs, and worship. Overall it was really great night! There was this one presentation, it wasn’t really a skit because there wasn’t anyone talking. But it was like a visual representation of sin and the Gospel. A person put a chair with a sign taped to it that read sin. There was music playing and then a girl from the leadership team was up on stage. She would look at the chair and think about it, and then walk away, then look back at it. Finally she went over to and was looking at the chair and finally touched it, just with one finger, but she touched it. And she was stuck, she couldn’t take her finger away from the chair. She tried so hard, but couldn’t. Then her hand got stuck on the chair. After that two girls who seemed to be friends walked up on stage. They waved at her, but she stood in front of the sign that said sin, and tried to act as normal as possible. This process went on, until she was kneeling/sitting on the chair and totally stuck, heartbroken and crying. Then a man came up on stage. Slowly, little by little, he took her hands and legs off the chair. Then he took her place on the chair. Finally he threw the chair off the stage (it was outside, so he threw it onto some dirt) symbolizing the defeat of sin. It was just such a real and beautiful picture of Jesus coming and saving us from sin.

He died so that we could have life.

What a beautiful thing? I can’t think of anything more beautiful and filled with love. So much so that had tears coming down my face by the time he finally tossed the chair off stage. I wish I had taken a video of it so other people could have seen it, but I didn’t so my description will just have to do.

Also Thursday night I met one of Tyler’s friends who is on the leadership team out at Harlow and she is possibly looking for a roommate and a new place to live. So that is really exciting! She seems really nice. Talking with her it was evident that she has a fire and passion for the Lord. It was so awesome and refreshing to talk to another woman that has that fire! It reminded me of friendships from SLO, and that was just really great! Tomorrow I am going to go to the church she normally goes to, and then we are going to have lunch and she is going to come look at the apartment! I am looking forward to checking out another church down here, and hopefully getting closer to finding a home church. One other thing, she is part of a bible study of women who are really getting into the word and talking about what it is saying. I’m pretty excited to go check this out too, probably once I get back from California. But I really want to find a solid group of women to become a part of, because especially at the end of the year I was really coming to realize how important fellowship and community with other sisters in Christ is for my relationship with the Lord and just my life in general!!

These past few days I have been in pseudo-summer. Basically not having class or any commitments, but having school work to do. I think it might be worse than having class because summer is so close, yet so far!! Well now off to make it a little closer and work on my 311 paper

p.s. I fly into California in less than a week! And in less than a week Vince and Angela will be married!! So exciting!!!!

p.p.s. I am wanting some good books to read while on vacation! Any suggestions??? I think Mere Christianity by C.S. Lewis will be one, but I have a feeling I am going to finish that and want some others to read! I am open to suggestions!!

Summer is soooo close!

On the upside I had my last day of classes yesterday, on the downside I have 2 8-page papers due next Wednesday (eeeekk)! But for the most part I am feeling good and so excited to be getting closer to a real summer with no school!!!

Roommate update: Things are going well. Two girls have come to look at the apartment in the last week. One decided to live somewhere else and the other hasn’t gotten back to me. There are still 2 girls that have emailed me that I am still talking with. So I just keep asking God for guidance and trusting that in the end His plan is perfect, and He will work it out!
Tyler Bierce is visiting Eugene, where he grew up. We had brunch today and it was nice to catch up & hang out with a familiar face! Tonight there is a campfire thing out at the camp he used to work at, so I am going to go out and meet some people and have a good time! It was really nice talking with him and he gave me some suggestions of churches to check out here in Eugene, and I am really excited to go and check those out!!

So in the subheading of this I listed cooking, and I had every intention of posting about things I cook, but I haven’t yet. SO, I am going to start! This is a pretty simple pasta dish and I think it is quite yummy! I just put it together at one point, so it doesn’t have a name….I guess I will call it Southwest Pasta! I don’t really measure, but you can put as much or little of everything as you want. Also it would be good with some chicken too! So here is the recipe:

  • Pasta of your choice (I like the shells)
  • Onion (I usually put about 1/2 and onion in)
  • Sliced mushrooms (I like 6 or 7 sliced up)
  • 1 clove garlic – chopped
  • Frozen cut corn
  • Emeril’s Essence (recipe below)
  • Grated cheddar cheese, or shredded Mexican cheese blend
  • Chopped cilantro (if desired for garnish)

Boil a pot of water & cook the pasta. While the pasta is cooking sauté the onions and mushrooms in a large pan. Add the garlic a few minutes after. Once they have been sautéing for a while add the frozen corn (you can use fresh, but if I have fresh corn I like to eat it on the cob!). To help the corn cook add a little of the pasta cooking water. Drain the pasta and add it to the veggies in the pan. Sprinkle some of Emeril’s Essence on the pasta & veggies, mix together. Add the cheese & mix together.  You can either add the cheese in the pan or in a serving bowl if you are going to do that. Top with cilantro if you have it/want it (I didn’t have any this last time I made it).

And heres the final product:

Emeril’s Essence (recipe from Food Network):

  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Combine all spices together. I just made a bunch at one time & have it stored in a big old spice jar. It is great on chicken & burgers too! It is a great way to easily add some flavor & it has a little bit of a kick!

Almost done with summer school! (and other updates about life)

I am approaching the last stretch of summer school! WOO! This week is going to be a busy one though! I have my thesis for 310 due Monday, 6 page paper journal about the readings for 310 due Tuesday, final in 310 Wednesday. Then next Monday I have a 6 page research project paper for 311 due, where I am going out to survey people. And finally next Wednesday I have a 5-8 page social issues paper comparing views of theorists for 310 due! I am hoping to have the papers done sooner, hopefully I can write the 310 one Thursday and Friday and then work on my 311 one over the weekend and be done Monday the 16th!!

Last night Ashley & Rachel (friends from elementary-high school) came down to my apartment in Eugene. It was really fun to hang out and make dinner! We made pizza, I must say my favorite was the BBQ chicken over the more traditional tomato sauce, pepperoni, mushroom, olive & onion. But it was nice to hang out at home and not be alone. I know that sounds really sad and depressing, but it hasn’t been all bad living by myself. I think being an only child was preparing me to live on my own for this summer. Also Gavin & I talk a lot or skype when I get lonely. BUT, I would love to talk/skype with other people and catch up on life : )

Speaking of catching up, I booked my tickets for visiting in August! I am flying down to Orange County August 20 for Vince & Angela’s wedding (which I can’t wait for! It is going to be so much fun!) Then Disneyland Sunday, which I am SO excited for especially because I have a FREE ticket!! After that I am going to be in SLO until August 31 when I am taking the train back to Salem. I am actually kind of excited to take the train back, which I normally wouldn’t be because it is a 22-24 hour train ride. But I am hoping it will be pretty with summer and the sunset. I am in no hurry to get back, so why not travel in one of the most relaxing ways?? Also it was half the price of a plane ticket out of SLO, so it is hard to beat! Can’t wait for all the fun things that I LOVE about SLO!!! Line dancing, farmers, the beach, Crusade, the drive-in …. not to mention the wonderful people who live there : ) Please let me know if you are going to be in town I want to hang out with you : ) ♥ ♥ ♥

Roommate situation update: God is sooooo good! Right now there are 4 girls (yes you read that right FOUR!) interested!! The first of the four came today to look at the place and meet. She seemed really nice and said she would get back to me early next week about her decision. The second one is coming early next week to look at the place and meet me. The other two have emailed me and we are still talking over email! I am really really really hoping & praying that one of these girls works out! I would really love for this whole situation to be resolved and the application process started by the time I go down to California! It would be so nice to not have to worry about that and just have a very relaxing vacation in California! I would appreciate any prayers for a resolved roommate situation.

Earlier this week as I was watering my veggies I noticed my green beans and broccoli have started growing! So I thought I would post some pictures. The green beans aren’t as small as when I first found them, they were such cute baby string beans! But the broccoli is still a little baby! It is just so cute!! Is it sad that I think baby vegetables I am growing are cute? Oh well, I think they are!

I have been going to CCF, and it has been good and a nice way to get to meet more people. They are going through Colossians. This last Tuesday Joe, the intern who is speaking this summer talked about the gospel and what it means to have our life hidden in Christ’s. It was just a really great reminder about what God did for us by having Jesus live a sinless life & die on the cross to atone for our sins! Sometimes I think I do not remember this enough and how amazing God is with how much he loves us! Also side note, sometimes an old man named Bud comes to CCF, I would guess he is in his 70s or 80s. I think during the school year sometimes his wife comes with him too. He comes before worship and then listens to the message. Then afterwords he hands out roses from his garden to all the women. (He only does this when roses are in season) But he is such a cute old man! So for the past 2 weeks I have had a rose from Bud in a vase on my dining room table. One last thing, I was going through my music today on my iTunes because my computer was getting full and I don’t listen to A LOT of the music on my computer (I had over 5,000 songs!) Then I was just listening to random music and I came across a song called Come Save by Sarah Reeves, and have pretty much fallen in love with this song! These were some of the lyrics that really spoke to me:

p.s.
